It always comes handy to know how to remove the bones of any bird (duck, chicken, pheasant, etc.)
- Game bird - 1
- Skin the bird beginning with a midline cut down the backbone (opposite side of where the breast are). Cutting with a small knife gently remove the skin from the carcass.
- Work around the wing and leg, dislocating the joint of each with the tip of small knife. Stop when you reach the breastbone or sternum on one side. Repeat the process on the other side.
- Holding the carcass carefully slice through the cartilaginous material that connects the skin to the breastbone, allowing skin and meat to fall free.
- Cut a line across each leg and wing. Pare the meat with the knife and discard the bones.
