Basic Vietnamese Dipping Sauce
Nuoc Cham is a simple dipping sauce. Goes well with Spring Rolls, fish, Vietnamese pancakes and grilled meats.
This a basic sauce (meaning it's both simple and you wanna have it on the fridge handy) that pairs well with many food, specially grilled meats and fish. You can also mix it with Asian noodles when they are almost done.
- In a mortar, place 2 chiles, sugar and garlic. Crush them together to form a thick paste.
- Transfer to a medium size glass bowl. Add the warm water, lime juice and fish sauce. Stir vigorously until it all comes together nicely. Make sure the sugar is well dissolved in the liquid.
- Add the sliced carrots and the remaining chile on top. Ready to use!
