Calamansi lemongrass sea scallops
The citrus touch of calamansi combined with honey add an interesting touch to this simple recipe. Ideal for a light meal or as an appetizer.
- Pat dry scallops.
- Heat a pan large enough to fit the scallops. Add the oil and when it's hot, add the scallops. Season with salt and pepper. Cook at medium-high heat for about 2 minutes per side (for medium rare). They should look golden.
- Remove the scallops from the pan and put them on a tray.
- Add the calamansi juice, honey and lemongrass. Cook until it's hot (make sure it doesn't burn). Pour the sauce on top of the scallops.
- Sprinkle sesame seeds on top of the scallops. Garnish with greens and raspberries. Put some Balsamic glaze on the side to decorate and add some interesting flavor (see picture). Enjoy!
